It’s officially pumpkin season!

If you’re obsessed with all things fall, these pumpkin spice cupcakes are a must-try. Soft, spiced, and topped with a luscious cream cheese frosting, they’re finished with a dusting of maple cinnamon for the perfect autumn bite. One taste, and you’ll be coming back for seconds!


Ingredients

Cupcakes

1.5 cup all purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1.5 tsp ground cinnamon

  • 1/2 tsp maple cinnamon topping

  • 1.5 tsp pumpkin pie spice

  • 1/4 tsp salt

  • 1/2 cup granulated sugar

  • 1/2 cup dark brown sugar

  • 1/2 cup canola oil

  • (1) 15 oz can of pumpkin puree

  • 2 tsp vanilla extract

  • 2 large eggs

  • 1/2 cup butter

Frosting

  • (1) package cream cheese (softened)

  • 1/4 cup butter

  • 3.5 cup powder sugar

  • 1 tbsp vanilla extract

  • Optional: Sprinkle of maple cinnamon

Instructions

Cupcakes:

  1. Preheat your oven to 350 degrees and line a muffin pan with cupcake liners.

  2. In a mixer bowl, whisk together your flour, baking powder, baking soda, salt, cinnamon, maple cinnamon, and pumpkin pie spice.

  3. In a separate medium-size bowl, whisk together your butter, eggs, granulated sugar, brown sugar, pumpkin puree, oil, and vanilla extract until combined.

  4. Take your wet mixture and pour it into your dry ingredients and mix until combined. (Batter should look thick.)

  5. Spoon your batter into your lined muffin pan. (Filling only 2/3 of the way through to avoid spillage)

  6. Bake for about 20-22 minutes or until a toothpick inserted in the center comes out clean.

  7. One of the most important steps: Please give your cupcakes time to cool completely before frosting. If you do not wait, the frosting will melt right off.

  8. Frost your cupcakes (recipe below) then sprinkle with some maple cinnamon topping, then enjoy!

Frosting:

  1. In a mixing bowl, combine your cream cheese and butter on a high speed.

  2. Next add in your powder sugar, vanilla, and salt and beat until combined.

  3. Lastly, grab your pipping bag and then load in your frosting!

    If you want a thicker frosting add an extra 1/4 cup of powder sugar
