Irresistible Strawberry Chocolate Chip Cookies

Long story short — I’ve held this recipe a secret from family & friends for years, no matter how many times they asked me for it! Well, it’s better late than never — these delightful treats combine the classic comfort of chocolate chip cookies with the fruity freshness of strawberries, creating a chewy, flavorful bite in every cookie. Whether you're looking for a sweet snack, a thoughtful gift, or a unique dessert, these cookies are super easy to make and will satisfy every sweet tooth out there.

Ingredients

  • 1 Box of Strawberry Cake Mix

  • 1 Tsp Baking Powder

  • 2 Eggs

  • 1/3 C Vegetable Oil

  • 1/2 Tsp Vanilla Extract

  • 1/2 C Semi-Sweet Chocolate Chips

  • 1/4 Tsp Coconut Oil

  • 1/3 C White Chocolate Chips

Instructions

  1. Line your baking sheet with parchment paper and preheat your oven to 350 degrees.

  2. In a mixing bowl, whisk together your dry ingredients (your cake mix and baking powder) then set it aside.

  3. In a medium bowl, whisk together your wet ingredients (your eggs, oil, and vanilla extract). Once your mixture is combined, slowly pour into your bowl with the dry mixture.

  4. Once both mixtures are combined, fold in your chocolate chips.

  5. Using a medium cookie scooper, scoop your dough and place on your lined baking sheet.

  6. Bake for 10-12 minutes or until the edges start to brown.

  7. After baking, remove your cookies from the oven let them sit for about 5 minutes, then transfer to a cooling rack.

  8. NEXT STEPS ARE OPTIONAL: While your cookies are cooling down, let’s start on our white chocolate drizzle. In a small bowl, add in your white chocolate and a 1/4 tsp of coconut oil.

  9. Microwave your chocolate in 15-30 second increments until fully melted.

  10. Once your chocolate is fully melted and cookies are at room temperature, you’re ready to tap into your inner artist and drizzle up a storm. There’s really no rhyme or reason to it. Just have fun and add as much chocolate as you like to each cookie! Remember this step is optional so if you’re not a fan of white chocolate or don’t want a chocolate drizzle on your cookies, there’s no need! Honestly, these strawberry chocolate chip cookies are pretty darn delicious by themselves.
