Have you ever tried something at a restaurant and thought — “I’m gonna try this at home!”?

I want to thank The Breakfast Company for introducing me to my latest brunch cocktail obsession - enter the Pineapple Upside Down Mimosa. In my opinion, it’s summer in a cup and just so simple to make!

Summary list of ingredients:

Pineapple Juice: Fresh or store-bought pineapple juice will do.

Rum: To keep with the tropical theme of this drink, I chose a toasted coconut rum from Siesta Key Distillery, but any rum will do.

Prosecco: Technically a mimosa should be made with champagne, but I prefer to make mine with Prosecco.

Grenadine: This will help give your drink a layered look and add an extra bit of sweetness.

Ingredients

  • ~2 oz Pineapple Juice

  • 1 oz Rum

  • 1/2 oz Grenadine

  • Prosecco to be measured with your heart

  • Garnish

  • 1 Maraschino Cherry per drink

Please note measurements above are for 1 mimosa, multiply the amount by the number of guests, if working in batches.

  • In a champagne flute, add pineapple juice, rum, grenadine, and top with Prosecco..

    • Optional: Drop in (1) maraschino cherry into each glass.
