
No Bake Energy Bites
Other than no-bake cheesecake, my no-bake dessert expertise is pretty limited. However, living in Florida is quickly changing my stance on this topic. It’s time to think and create sweet treats that do not require an oven. Introducing my no-bake energy bites that are loaded with feel-good ingredients while still being oh so tasty! This recipe is SO easy to make and is made with ingredients I just about always have on hand. They’re the perfect sweet & healthy treat for snacking throughout the day.
Ingredients
3/4 c White Chocolate Peanut Butter
1/4 c Honey
3/8 c Overnight Oats (this measurement isn’t on a typical measuring cup so for simplicity sake you can use 1/2c + 1/8c)
1/4 c Semi-Sweet Chocolate Chips
1/3 c Diced Dried Dates
1/4 c Hemp Seeds
1 tsp Maple Cinnamon
Instructions
Line a plate with parchment paper and set aside.
In a medium mixing bowl, toss in all of your ingredients. Using a rubber spatula, combine all your ingredients together until a dough forms. (FYI, the dough will be VERY sticky and that’s totally normal).
Grab your lined plate, then using a small ice cream scooper scoop up your dough and roll them into a ball. Place the dough a few inches apart, you don’t want them to touch or else they will get stuck together.
Once you’ve rolled all your dough, pop your plate into the fridge for about 15 minutes for the dough to set.
Now it’s time to snack, enjoy!
P.S. You’ll want to store your energy bites in the fridge so they can stay firm and held together. I recommend keeping them in an air tight container so they stay nice and fresh.
