Lemon Crinkle Cookies

A lemon lover’s dream cookies.

These soft and chewy lemon crinkle cookies are surprisingly easy to make and honestly quite fun! Roll the cookie dough into little balls, spin them around in sugar, and pop ‘em in the oven to watch them transform into delicious crinkle cookies.

Granulated Sugar - AKA plain ol’ white sugar, it helps build the chewy goodness texture of these cookies.

Lemons - Fresh lemons will amp up the tangy citrus flavor. FYI You’ll need both lemon zest and juice!

Eggs - Use large eggs at room temperature for the best results!

White Vanilla Extract - White vanilla extract will really take your cookies to the next level and deepen their flavor. Don’t be afraid to be a little heavy-handed.

All-Purpose Flour – You can use regular ol’ all purpose flour to create these delicious cookies.

Baking Soda + Baking Powder - Combining these two will give your cookies a better rise and spread.

Dough

  • 1 and 1/4 cup granulated sugar

  • 1 lemon’s worth of zest

  • 1/2 cup butter

  • 1 whole egg + 1 egg yolk

  • 3 tbs lemon juice

  • 1 tsp white vanilla extract

  • 2 cups flour

  • 3/4 tsp baking powder

  • 1/2 tsp baking soda

  • pinch of salt

    Coating

  • About 1 cup of granulated sugar

  • About 1 cup of powder sugar

Instructions

  1. Preheat your oven to 350 degrees and line a cookie sheet with parchment paper. Set aside.

  2. In a small-to-medium size bowl, combine sugar and lemon zest. Using your fingers, rub the zest into the sugar until the sugar starts to clump together. Sugar will turn a pale yellow shade and let out a lovely lemon scent.

  3. In a mixing bowl combine 1/2 cup butter and lemon sugar. Beat until combined; the butter should look smooth and fluffy.

  4. In your mixing bowl, add an egg and egg yolk, lemon juice, and vanilla extract. Beat until smooth—remember to scrape down the sides of your bowl throughout the process.

  5. In your mixing bowl, add in flour, baking powder, baking soda, and salt. Stir on low speed until combined. Fun tip: You can cover your mixer with a clean kitchen towel so flour doesn’t fly about.

  6. Cover bowl with plastic and place in fridge for 2 hours.

  7. Now onto the fun part grab: 2 small bowls and fill one with granulated sugar and one with powdered sugar. Take your dough, roll them into balls in the palm of your hand, then drop them in the granulated sugar bowl, then the powdered sugar bowl.

  8. Place cookies about 2 inches apart on your cookie sheet. Bake for 10 to 12 minutes or until the edges are set and slightly golden. Allow the cookies to cool on a baking sheet for 5 minutes and then transfer them to a cooling rack to cool completely.
