Funfetti Rice Krispie Treats

Rainbow sprinkles genuinely bring me so much joy - they’re the perfect topping for ice cream, donuts, and even Rice Krispie treats!

Rice Krispie Cereal – You can use any puffed rice cereal in place of the Rice Krispies brand, so feel free to use whatever you have on hand!

Marshmallows: The star-binding ingredient for this dessert! Melted marshmallows will hold everything together in all its gooey glory!

Sprinkles: I love a classic rainbow sprinkle, but feel free to use whatever sprinkle you have on hand!

Butter: The combination of butter and marshmallows creates the perfect soft and chewy combo!

White Vanilla Extract: I always say to measure vanilla extract with your heart. A splash or as much as you're willing to use will level up the taste of these Rice Krispie treats and deepen the flavor.

Ingredients

  • 6 cups Rice Krispie Cereal

  • 10.5 oz bag Of mini marshmallows (about 7 cups)

  • 5 tbsp butter

  • 1/2 tsp of vanilla extract

  • 1/2 tsp salt

Instructions

  1. Line a baking dish with parchment paper.

  2. Add butter to a large pot and set over medium heat. Allow butter to brown lightly until it smells toasted (should be about 2-3 minutes)

  3. Remove from the heat and stir in the marshmallows until it’s all melted. Then toss in your vanilla extract, salt, and Rice Krispie treats and begin mixing until it’s all combined.

  4. Now for the fun - toss in your sprinkles and fold to combine.

  5. Spread your Funfetti Rice Krispie mixture into your lined baking dish. (Optional: Throw in some more Rainbow Sprinkles if you’d like!)

  6. Gently press the mixture into your pan and let it sit for at least an hour.

  7. After the hour has finally passed, lift up your parchment paper from the pan and pop ‘em onto a cutting board. Slice your treat into squares and enjoy!

P.S. DO NOT refrigerate your Rice Krispie treats. Doing so will make them extremely hard and brittle.
