Chocolate Peanut Butter

Apple Rings

Kiddo and adult-child approved.

Whether you store these in the freezer to snack on or you’re prepping after-school snacks for your little one. These Chocolate Peanut Butter apple rings are going to be a hit!

Summary list of ingredients:

Apples - I’m preferential to a pink lady apples, but you truly can use any red variety. Though I’d avoid the sour apples for this recipe.

Chocolate Chips - If you have a bag of semi-sweet chocolate chips lying around, now’s your time to bring them out.

Peanut Butter: I’m a Peanut Butter & Co Smooth operator lover, but if you’re interested in a crunchier texture, feel free to test that out!

Coconut Oil: Just a little bit is needed to get you a silky smooth chocolate sauce to drizzle on your apple rings.

Ingredients

  • (1) Large red apple

  • Peanut Butter (smooth)

  • 1 tsp Coconut Oil

  • Chocolate Chips

Instructions

  1. Rinse, slice, and core your apples.

(Pro tip - if you don’t own an apple corer you can literally use a bottle top. On social you may notice that I’m using a twist top from a wine bottle)

  2. Once you’ve got your apple rings, place them on a piece of parchment paper and spread a thin layer of peanut butter over each slice.

  3. Once you’ve finished up your peanut butter apple rings, place them in the freezer while we melt some chocolate.

  4. Place your chocolate chips and coconut oil in a small microwave-safe bowl. Heat in the microwave using 15 second increments until you have a silky smooth texture.

  5. Grab your apple rings from the freezer and drizzle the chocolate on top of your rings.

  6. Once they’re coated to your liking, place your chocolate peanut butter apple rings in the freezer once more. This time, let’s leave them in for about an hour.

  7. After an hour, remove from freezer and enjoy!

Fun fact: You can store these treats in your freezer for about a week!
