Pesto Chicken Pizza

Looking for a quick and easy meal to throw together after work? Look no further - this chicken pesto pizza comes together in roughly 30 minutes! If you’re not a fan of pesto, swap it for a sauce of your choice!

Ingredients

  • 1 Ib Pizza Dough

  • 2 Tsp Semolina Flour (for dusting)

  • Pesto Sauce

  • 1/2 ball of Mozzarella Cheese

  • ~ 6 cherry tomatoes halved

  • 2 Chicken Tenderloins

  • Salt/Pepper to taste

  • 1 Tbsp Golden Steer Outlaw Rub

  • ~ 1.5 C Chicken Broth

    Optional:

  • Block of Parmesan Cheese

Instructions

  1. Preheat your oven to 400 degrees.

  2. Line a baking sheet or pizza round with parchment paper.

  3. In a saucepan, add your chicken broth over medium high heat. Season your chicken tenderloins with salt and pepper then place in the saucepan and cover. This should cook for about 12 minutes flipping halfway through.

  4. Dust a clean area with semolina flour then roll out your pizza dough.

  5. Once you’ve shaped your pie, spread your pesto evenly throughout.

  6. Next grab your mozzarella ball and use your hand to break it apart and scatter about half of it onto your pizza dough.

  7. Take your cherry tomatoes and scatter them on your pie.

  8. At this point, your chicken should be fully boiled. Take it out of your sauce pan and into a small bowl. Using two forks shred your chicken. Once fully shredded, season with outlaw rub + 1 Tbsp of reserved chicken broth. Give that a good mix then scatter your chicken onto your pizza.

  9. Take the remaining half of mozzarella cheese and scatter it over your pie.

  10. We’re ready to bake, place your pie in the oven for about 18 minutes.

  11. Once your pie is done baking you’re ready to eat! But if you’re looking to add a little more cheesy goodness, I recommend a rain storm of freshly grated parmesan cheese.
