Ice-Cream Sandwiches
Let’s make an icy treat!
Summer is in full swing, so it’s time to think about little treats that are going to hit the spot and cool you down. Enter the classic chocolate chip ice-cream sandwich! Typically, ice-cream sandwiches are quite large, but if you handed me one, I’d probably eat the whole thing and ask for another. However, this year I’ve really been into making “mini-treats”. They’re just as fun to make & eat (also make for a perfect little treat to handout at get-togethers).
Summary list of ingredients:
Puff Ready to Bake Chocolate Chip Cookies – You can use any ready to bake chocolate chip cookie dough, but I like Puff’s because they’re light, fluffy, and mini-sized!
Ice-Cream: My personal preference is definitely Neapolitan to get that nice balance of strawberry, vanilla, and chocolate. BUT, of course, if you have a favorite ice cream - why not try it in mini ice-cream sandwich form?!
Extras/Optional Add-ons:
Sprinkles: Rainbow sprinkles just make everything more bright and fun
Chocolate Chips: If you want to amp up the chocolate factor, make sure to roll your sandwiches over some mini chocolate chips.
Preheat the oven to 300 degrees.
Cover the baking sheet with parchment paper. Then place cookies on top (keep them apart. The cookies will spread a bit while baking)
Bake for 18 minutes then let them rest for about 5 minutes outside the oven.
Once the cookies are cool, slice them in half.
Place a scoop of ice cream on the sliced cookie, then top with the other half.
Optional Step: roll sandwiches in sprinkles or chocolate chips.
If you’re not going to eat them right away, place them in the freezer to keep the treat intact.
